Hi there. I don't want to play politics so it's not about international recognition, but about sovereign control of the territory. When Gaza or the West Bank controls its own borders, then Palestine will be a country, whether they are recognized or not.
But, it's your quiz. You should feel free to make any choice you want.
I take it you mean majority use of the Arabic script? If so, why Brunei where the Rumi script is mostly used and Eritrea where the Ethiopic fidal is mainly used? If you mean used as an official script you could add Malaysia, and China (where Uiguir is an official language of Xinjiang and written in Arabic script (as officially are Kyrgyz and Kazakh in China). And I note that Nigerian banknotes still use the Arabic script for Hausa.
(Oh, I see Wikipedia says Eritrea uses Arabic as a semi-offical language. I must admit to only coming across Tigrinya myself, but then I've only met Eritreans abroad).
In this quiz are included countries in which arabic is only official script and countries where it is official alongside other scripts. In China it is recognized in subnational level (not recognized as a script of whole country) and for Malaysia it says it is an alternative script so i will consider if it should be included
