Some explanations regarding the inclusion of these countries.
Most Middle Eastern territories: Territories of polities created after the First Crusade, some of which would end up expanding by themselves. Cyprus was captured by Crusaders after the Third Crusade. Egyptian territories outside from Sinai were included as a result of failed crusades.
In and around the Balkan region: Frankokratia states. Territories conquered from the Byzantine Empire.
Countries along the Baltic Sea, part of Transylvania and Bad Mergentheim: Territories controlled by the State of the Teutonic Order.
Rhodes (+ surrounding islands), Malta, Tripoli, Caribbean territories and miscellaneous German territories: Territories controlled by the Knights Hospitaller.
